Hurdle #1 (Thanksgiving) has come and gone. How did you do? Did you sink or swim? Regardless, this is past and this is a new day and a new start. Those of us who have diabetes do not have to 'bury' ourselves and take all the pleasure out of our lives. For many of us the diagnosis of type 2 Diabetes occurs after we are past the blush of youth. Our activities tend to become less active and more focused on eating. As we are more sedentary it is more difficult to monitor and control our weight. Obesity is a major factor in the increased prevalence of type 2 Diabetes in our society today.
Don't become discouraged. As I mentioned in earlier articles we just need to plan and prepare so that we can enjoy social events without negatively impacting our health. Are you invited to a social event this season where you are to bring a dish? You of course want your offering to be attractive and delicious. That does not mean it has to be calorie laden. Consider taking a healthy dish. This will be beneficial not only for you but also for other guests at the event. The menu below is but one choice of many options out there. I am giving you an appetizer and a dessert that fit into diabetic diets but tempt any palate.
CHICKEN SKEWERS
1 1/2 lb boneless, skinless chicken breast
1/2 c. chutney
1 Tbsp. balsamic vinegar or red wine vinegar
1/3 c. white or red wine
1/4 c. olive oil
3 bell peppers (green, yellow, and red, seeded and cut into 1/2 inch squares
Cut the chicken into 3/4 inch cubes. Put into a large mixing bowl. Add the vinegar, wine, chutney, and olive oil and stir to combine. Marinate in the refrigerator for at least 4 hours or overnight.
Drain the chicken and put on 6 inch long skewers, alternating chicken and bell peppers. Broil or grill over hot coals for 8 to 10 minutes. Serve hot Yield 40 skewers. If taking this dish out. Prepare ahead and warm in oven just before serving.
BANANA WHIP
1 c. miniature marshmallows
1/2 tsp. vanilla
1/4 c. skim milk
14 vanilla wafers, crushed
1 c. fat-free whipping cream
2 Tbsp. finely chopped walnuts
1 c. diced ripe bananas
In a small saucepan, combine marshmallows and milk. Cook and stir over low heat until marshmallows are melted. Remove from the heat and cool. Fold in whipped cream. Add bananas and vanilla. Spread cookie crumbs in the bottom of serving dish. Top with banana mixture and sprinkle with nuts. Yield: 4 servings (double recipe as needed to fit your requirements for larger groups.)
